Directions

Ingredients

  • 2–3 cups cooked and pulled Air2Ground Farms pasture-raised chicken (about 1 pound—breast or thigh; rotisserie works in a pinch)
  • 3 tablespoons butter (preferably grass-fed)
  • 4–5 cloves garlic, minced
  • ½ cup fresh basil leaves, chopped, plus more for garnish
  • ½ cup full-fat sour cream
  • ½ cup heavy whipping cream
  • ¾ teaspoon sea salt (or to taste)
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning

Instructions

1. Build the Flavor Base: Heat a 12" cast iron skillet over medium heat. Melt the butter, then add garlic and most of the basil. Stir for 1–2 minutes until fragrant and just softened—don’t let the garlic brown.

2. Create the Creamy Foundation: Lower the heat to medium-low. Stir in the sour cream, blending until smooth with the butter, garlic, and basil. Let it gently warm but do not let it simmer hard.

3. Add the Chicken: Add the cooked, pulled chicken to the skillet. Stir well so every bite is coated in the creamy, aromatic sauce. Allow to warm through for 2–3 minutes.

4. Season and Simmer: Sprinkle in the salt, pepper, and Italian seasoning. Stir and let the skillet gently simmer (low heat!) for another 3–5 minutes to marry all the flavors. Taste and adjust seasoning.

5. Finish with Cream: Slowly pour in the heavy whipping cream, stirring as you go, until the sauce is glossy and your preferred consistency. Let it warm until just heated through—avoid boiling, which can cause the sauce to break.

6. Serve and Enjoy: Spoon into bowls, plate over steamed or roasted vegetables, or serve straight from the skillet. Garnish with extra fresh basil for a burst of color and flavor.

Tips

  • Make it meal-prep friendly: Cook extra chicken early in the week and keep some pulled for speedy dinners like this!
  • Leftovers: Store in an airtight container in the fridge for up to 3 days. Gently reheat in a skillet or microwave on low.
  • Optional add-ins: Wilt in a few handfuls of baby spinach or serve with a wedge of lemon for extra brightness.
